Anyhow back to my Poppers I carefully remove every seed from the pepper or Chile (in Spanish) after I washed out the pepper making sure all seeds removed (this is important for health reasons) this is what my Jalapeno looks like after I have removed and cleaned out the inside. I have posted a few pictures of my Peppers cleaned and ready for stuffing.
When I stuff them I found if I slice down almost to the middle, it is easier to stuff and you can put more cheese in, You want to but thin bacon I found Great Value from Walmart is the best to use if you like the bacon with black pepper you can pepper your Jalapeno after you have wrapped it in bacon use One and one half bacon slices per Jalapeno if using the large Peppers,
if using Medium or small then wrap in on thinly sliced piece.
Use tooth picks to hold the bacon on the pepper and to hold the pepper closed after being stuff with cheese. You can use any cheese you like I used Monterrey Jack Cheese here, I would love to try some sharp cheddar.
My mom would use cast Iron skillets in our Kitchen I just recently started using them again. She is right the food is different it tastes better as she would say in the cast iron skillet. If taken care of these pans (your must oil after washing and drying avoiding any rust) can help with Iron for those who are Anemic. I don't know how it may be a wise tale who knows...lol.
Any how I have a picture of all the ingredients used to make these Jalapeno Poppers, I also gave you some ideas to try. I am going to be posting more meals, finger foods and more.... Nana is expanding her horizons getting my life back. Cancer Lost God won so we are getting our cook on...lol... I love being crazy, kooky and funny life is to short to be serious. I want to be remembered long after I am gone. God is Good. Right.
My dad told me when they had dinner young they had a homemade corn tortilla made from the stove in their Adobe home in Fresno California. One Chile and Cheese if they made enough money that day. They were a large family that worked hard for a living. I thank God for the work principle my father and family instilled in me. We come a family of hard working farm workers. They taught us Hard work pays off if you stick to it.

I LOVE cooking but going thu health problems put a dapper in it when I can cook anything, and blog about it I am over joyed. Thanking GOD for the small things I have taken for granted!
